Yummy Pancake recipe

ENJOY

Strawberry “ Cheesecake” Pancakes makes 8 pancakes

½ c milk
¼ c sugar
1 egg
2 TBSP unsalted melted butter
1 tsp vanilla extract
1 c all purpose flour
1 tsp baking powder
¼ tsp salt
½ c small curd cottage cheese
1 tsp lemon zest minced

cook on the griddle on medium heat

Whisk milk, sugar, eggs, butter and vanilla together in a large bowl. Combine the flour, baking powder and salt in a small bowl then add to the egg mixture until just incorporated.( it can be a little lumpy). Blend in cottage cheese and zest.


Candied Graham Crackers
4 TBSP unsalted butter
1 c graham crackers crushed (4-5 crackers)
2 TBSP sugar
½ t ground cinnamon
pinch of salt


Sweetened Sour Cream
Whisk together 1 cup sour cream and a ¼
cup powdered sugar, then chill.


Fresh Strawberry Sauce
4 c fresh strawberries in halves
¼ c sugar
¼ c water
1 tsp cornstarch
1 tsp orange zest minced

Combined all ingredients in a large saucepan. Bring to boil reduce heat and simmer7 minutes or until strawberries soften.

Layer pancakes, strawberries, sweet cream and crumbs for the most delicious breakfast ever!

Oh, but how do you prepare the candied graham crackers? Do you just melt the butter and mix it all together?

I was scrolling through your blog updating myself on the Frantz family's life. When I saw that Aaron got strawberry cheesecake pancakes I thought "Holy cow! I'm gonna have to get that recipe from Melissa!" And here it is! YES.
